One day, I saw a bag of Reese’s peanut butter chips in the grocery store and I had to buy them. I had no idea what I was going to do with them but it didn’t take me long to find several recipes for them. This one is the easiest and most requested. If I’m making cookies, everyone asks for PB Chip chocolate cookies!

Peanut Butter Chips ($7.58)

My recipe calls for 2 bags of chips, which is probably around 500 grams. A while ago, Costco had huge 2.5 kg bags so I’ve just been eyeballing the “right” amount since. My grocery store no longer carries PB chips so when I run out of Costco ones, I’ll grab them from the Bulk Barn instead.

You could definitely substitute a different type of chip here.  Butterscotch, toffee, chocolate, white, or anything else you can get your hands on. Or try candy like Reese’s Pieces, M&Ms, chopped up pieces of leftover Halloween candy, mini eggs, you’re really only limited by your imagination!

Cocoa Powder ($1.90)

I use a Dutch-processed cocoa powder because that’s what’s readily available here. A natural unsweetened cocoa powder would also work and might result in the cookies rising more.

You can substitute baking chocolate (unsweetened) for cocoa powder. I never have, but if I was going to try I’d go with 7-8 ounces of chocolate and I’d reduce the butter by about 100g (so use about 350 grams).

How Can You Reduce the Cost?

The biggest expense here is the peanut butter chips. This recipe uses a very generous amount. The cookies are loaded with chips. Using fewer chips would save money.

If you use half as many chips, you’d save $3.79 making your per cookie cost a tiny $0.38 each.

Equipment

You only need a couple of things to make this recipe.

Stand Mixer

You’ll use the paddle attachment for these cookies.

PB Chip Chocolate cookies involve creaming butter and sugar together. A stand mixer makes this easy because you can set it up and then do something else for the few minutes.

If you don’t have a stand mixer, you can use a handheld electric mixer. You can try to cream butter & sugar by hand but it’s going to take a long time and a lot of vigorous beating.

Small Tools

To make this recipe, you’re going to want the following small tools:

  • Sheet Pans: needed to bake your cookies in the oven.

Got Leftovers?

How? I could eat all of these cookies in 2 days myself (I mean, I shouldn’t but I could).

  • Freeze then Bake: cookie dough can be frozen (as individual cookies) and then baked. They’re best refrigerated overnight before baking but you can bake them directly from frozen (baking time will increase by a few minutes).
  • Freeze after Baking: you can freeze baked cookies. Allow them to come to room temperature naturally before eating for the tastiest cookies or zap them in the microwave for the fastest cookies. They’re best if eaten within a month.

Ingredients
  

  • 450 g Butter ($4.12)
  • 600 g Sugar, White ($0.72)
  • 3 g Salt ($0.02)
  • 4 Eggs ($1.24)
  • 17 mL Vanilla Extract ($0.51)
  • 480 g Flour, All-Purpose ($1.44)
  • 160 g Cocoa Powder ($1.90)
  • 3 g Baking Soda ($0.02)
  • 2 bags Peanut Butter Chips ($7.58)

Instructions
 

  • Preheat oven to 350*F and line (or grease) sheet pans.
  • In mixer bowl, cream together butter, sugar, and salt using the paddle attachment.
    450 g Butter, 600 g Sugar, White, 3 g Salt
  • Mix in egg yolks and vanilla.
    4 Eggs, 17 mL Vanilla Extract
  • In a separate bowl, combine flour, cocoa, and baking soda.
    480 g Flour, All-Purpose, 160 g Cocoa Powder, 3 g Baking Soda
  • Mix dry ingredients into the wet ones until just combined.
  • Fold in peanut butter chips.
    2 bags Peanut Butter Chips
  • Drop heaping tablespoons of dough onto baking sheets at least 2 inches apart.
  • Bake for 8 to 10 minutes, until cookies are set.
  • Cool immediately on wire racks.
  • Serve & enjoy!
