What are Baby Potatoes?

Baby potatoes (aka new potatoes) are potatoes that are harvested early. This means that any variety of potatoes can be harvested as a baby potato.

Fully mature potatoes take about 4 months to grow. Baby potatoes are harvested after only 2 to 3 months.

Since they’re not fully mature, new potatoes are different than fully mature ones. New potatoes:

  • are smaller,
  • have softer and thinner skins
  • have less starch
  • have more moisture
  • retain their shape when cooked
  • taste sweeter
  • have softer flesh

Roasted Baby Potatoes Recipe Ingredients

There are 3+ ingredients in this dish.

Baby Potatoes ($1.00)

My grocery store sells 5-pound bags of mixed Red & Yukon Gold baby potatoes for a pretty reasonable price (IMO).

I think that 5 baby potatoes is the perfect serving size for one person.

Baby potatoes are more expensive than mature ones. You can make this recipe with mature potatoes (I’d go with Yukon Gold or Red), just chop them into new-potato-sized pieces.

Olive Oil ($0.25)

I’m usually a butter girl but oil spreads on the potatoes much easier. You can use a different oil of your choice or try using melted butter.

Seasoning of Choice ($0.25)

The sky’s the limit when it comes to seasoning options. Seriously, you can do whatever you want!

The cost of seasoning is going to vary depending on what you use. I think that 25 cents is a generous estimate and you’ll often be way under that.

How to Season Roasted Baby Potatoes

I tend to sprinkle a little of this and a little of that on my baby potatoes when roasting them. The more you make them, the more you’ll appreciate some variety and the ease of it. But until you’re ready to just go for it, here are some of my favorite seasonings:

  • 1 tsp Garlic Salt
  • 1 tsp Parsley (dried) + 1/2 tsp Salt + 1/2 tsp Black Pepper
  • 3 cloves Garlic (minced) + 1/2 tsp Salt + 1 tbsp Rosemary (fresh)
  • 1 tsp Smoked Paprika + 1 tsp Garlic Powder + 1/2 tsp Salt
  • Pinch of Red Pepper Flakes + 1 clove Garlic (minced) + 1/2 tsp each: Rosemary + Thyme + Parsley
  • 2 tsp of my Pulled Pork Rub Recipe

How Can You Reduce the Cost?

The biggest cost is going to be potatoes. Mature potatoes are much cheaper so they’ll make the biggest difference.

You can also choose to use a light amount of only one or two seasonings to keep your costs down.

Equipment

You don’t need much to make roasted baby potatoes.

Roasting Pan / Sheet Pan

You need something to roast the potatoes on. Any large flat surface oven-safe surface will work. I use a regular sheet pan.

Small Tools

  • Parchment Paper: this is optional but I like to use parchment paper to keep clean up simple.

Got Leftovers?

Eat them! Either reheat them and eat them as is or repurpose your leftovers into a completely new meal.

  • Reheat: leftover potatoes can be reheated in the microwave or oven.
  • Refrigerate: you can store leftover potatoes in an airtight container in the refrigerator for up to 5 days.
  • Freeze: You can freeze extra roasted potatoes for up to 6 months. Allow them to cool completely, then flash freeze them on a sheet pan. Once they’re frozen, you can store them in airtight containers.
    Note: flash freezing the potatoes will help prevent them from freezing into one large lump so you can eat as many (or few) as you want later.
  • Repurpose: Use your leftover roasted new potatoes in a different recipe like a hash, potato salad, or pancake. The sky is the limit. Have fun and enjoy.

Leftover Potato Hash

Dice up your leftover pototoes and fry them with butter, onion, garlic, and veggies of your choosing. Serve with eggs for a yummy breakfast.

Ingredients
  

  • 20 Baby Potatoes ($1.00)
  • 2 tbsp Olive Oil ($0.25)
  • Seasoning of Choice ($0.25 estimate)

Instructions
 

  • Preheat oven to 425°F.
  • Wash potatoes & pat dry.
    (Note: many new potatoes come pre-washed)
  • Optional: cut potatoes in half, lengthwise.
  • Toss potatoes in oil and seasoning.
  • Bake potatoes for 25 to 35 minutes.
  • Serve & enjoy.

Notes

Should you cut baby potatoes?
If you want bite-sized pieces, go ahead and cut them. Smaller pieces will cook faster.
I don’t cut my baby potatoes because it’s an extra step that I’m too lazy to do.
